Withering: The bunches are left to dry naturally in the fruit cellar, from the third ten days of October until the end of January, were periodically checked and had, at end of the process, a drop in volume of about 35%,appearing extremely healthy with no mold nor rot.
Vinification: Pressing and destemming of the grapes and followed by fermentation in stainless steel tanks, with maceration of about 18 days and numerous must replacement operations.
This was followed by malolactic fermentation, which ended approximately in May 2022.
Aging: From June 2022 the wine was placed in 12.5 hl Slavonian oak barrels, and there it spent an aging period of about 1 and a half years, to then be destined for the preparatory phases of bottling and a subsequent phase of aging in glass before being marketed
Food pairings: With a touch of sweetness but not too much and its balanced acidity, the "Recioto" has a fascinating almond aftertaste on the palate, an intriguing bitter-sweet finish. , with blue cheeses such as blue stilton or in contrast with foie gras or in Verona with the Christmas cotechino.
